Beauregard Burritos with guacamole and salsaPrint this recipe
A fast and simple vegetarian burrito.

1 tbsp oil
1/2 onion, chopped
2 cloves garlic, crushed
1 can Mexican style beans in sauce (any chilli beans in sauce will work)
2 cups cooked and mashed Beauregard kumara
6 large flour tortillas, warmed
grated cheddar cheese
Preheat oven to 175 degrees Celsius. Heat oil in a medium frying pan, and saute the onion and garlic until soft. Stir in beans, and mash lightly. Divide the bean mixture and mashed kumara evenly between the warm flour tortillas placing the mixture in the middle. Top with cheese. Fold up tortillas around the mixture burrito style, and place in an ovenware dish. Bake for 12 minutes in the preheated oven.
Serve with sour cream, guacamole, salsa and a green salad on the side.
