A simple and easy dish to put together for lunch or family tea.

1 large onion, chopped
2 cloves garlic, chopped
1 tbsp butter
2 kumara, cooked and cubed
1 cup tasty cheese, grated
1/2 cup milk
1/2 tsp salt
1/2 cup self-raising flour
either 1 can asparagus spears or 1 can whole kernel corn
1/4 cup liquid from chosen canned vegetable
Cook chopped onion and garlic in the butter until tender but not brown. Add cubed cooked kumara and heat through. Mix milk, eggs, 1/4 cup of liquid from the canned vegetable, salt and flour until blended. Pour into a greased flan dish. Cover with grated cheese and the drained asparagus or corn. Cook at 210 degrees Celsius for 20-30 minutes or until set in the centre.
