Roasted Kumara Mash DipPrint this recipe
Delta Sweet harvest Roasted Kumara Mash Dip is perfect served with crusty pieces of French bread or crostini.

2 large Beauregard Kumara
1 Tbsp olive oil
1 Tbsp orange juice
salt and pepper
Preheat oven to 170 degrees Celsius. Wash kumara thoroughly, brush with olive oil and sprinkle with salt.
Place on a roasting rack and bake for 40 minutes or until soft. Once cooked, split kumara in half and remove the inside of the kumara. Mash with olive oil and a splash of orange juice. Season with salt and pepper to taste.
