The gamey flavour of duck beautifully offsets the sweetness of kumara in these delicious patties.

2 cups cooked, shredded duck with fat
4 cups grated kumara
1-2 eggs to bind
1/2 cup flour, approx
salt and pepper
1 spring onion, sliced finely


Preparation Instructions

Whisk eggs and combine with flour to make a thick paste. Add duck, kumara, spring onion and season well. Make into patties of desired size (flatter patties cook through more quickly).

Cooking Instructions

Seal in a pan and finish in oven until kumara is cooked through and tender.

Serving Instructions

Serve with a side dish of blanched green beans with crumbled feta or a crisp green salad. Serves 4 - 6.
