Curried Kumara Cubes with Roasted CashewsPrint this recipe

1/2 cup roasted cashews
4 medium kumara
2 tsp curry powder
Roast cashews in 190 degree Celsius oven for 10 minutes, or until lightly golden. Peel kumara and cut into cubes, cook in boiling salted water for 5 minutes, or steam until just tender. Drain. Peel and finely chop onions, saute in the butter 5 minutes or until soft. Add curry powder and cook about 1 minute (until curry smells fragrant). Toss kumara and cashews into this mixture until coated and heated through.
