1 cup sugar
1 1/4 cups vegetable oil (sunflour)
4 eggs
2 1/2 cups grated kumara and pumpkin (total)
2 grated apples
1/2 cup coconut
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla essence
nuts and raisins are optional

500g cream cheese
3/4 cup icing sugar
1/4 cup melted butter
1 tsp vanilla


Cooking Instructions

Beat together sugar and vegetable oil. Beat in eggs. Add remaining ingredients to liquid mixture. Pour into large square baking dish (at least 25x25cm). Bake for 45-50 minutes at 190 degrees Celsius. To make icing: beat all icing ingredients together until smooth. Ice when cool.
