Ingredients
4 small kumara
4 rashers lean bacon
1 tbsp butter
1 clove garlic, finely chopped
Method
Preparation Instructions
Parboil kumara 15-20 minutes or until softened or microwave 3-4 minutes on high.
Cut into bite sized pieces.
Remove rind from bacon.
Thread the kebab sticks through one end of the bacon slice and follow with kumara.
Fold bacon back over kumara and through skewer.
Continue until all bacon has been zigzagged around kumara.
Melt butter and mix in garlic.
Brush kebabs. Cooking Instructions
Grill 6-8 minutes, turning frequently and brushing with garlic butter mixture. Serving Instructions
Makes 4 kebabs to serve as a light meal for 2 people accompanied by a crisp lettuce salad.
