Roast Chicken with Kumara and Sausage Meat Stuffing

An alternative stuffing for an interesting change to your roast chicken meal.

1 number 8 chicken

1 onion
1 stick celery
1 slice toast bread
1/2 cup sausage meat
1/2 cup cooked, mashed, kumara
1 egg
1/2 tsp oregano
1/2 tbsp chopped parsley
salt and pepper to taste


Preparation Instructions

Peel and chop the onion. Wash and finely chop the celery. Remove crusts from bread and cut into small cubes. Combine the onion, celery, bread cubes, sausage meat, mashed kumara, egg, oregano, parsley and seasoning. Spoon the stuffing mixture into the body cavity of chicken.

Cooking Instructions

Roast for 1 1/2 hours at 180 degrees Celsius, or until chicken juices run clear.

Serving Instructions

Serve with a roast kumara medley or search our side dishes for an accompaniment that suits.
