Roast Kumara Medley

6 kumara (2 of each variety- red, gold and orange-makes for a colourful medley)
4-8 baby red or brown onions
6-10 cloves of garlic, peeled
2 tbsp olive oil
1 tbsp runny honey
1 tbsp whole seed mustard
2 tbsp fresh rosemary
salt and pepper to season


Preparation Instructions

Cut kumara into chunks, about 3-4cm square, peeled or skin on as per your preference. Peel skin off onions and garlic. In a plastic zip lock bag place the kumara and the remaining ingredients. Shake to coat.

Cooking Instructions

Place in a roasting dish and cook at 180 degrees Celsius for about 30 minutes or until kumara is tender and golden.
