1/2 cup butter
1 cup hot mashed kumara
2 tsp salt
2/3 cup sugar
1 pint (600ml) lukewarm milk
1 oz yeast
6 cups sifted flour
Mix butter with kumara, salt and sugar.
Dissolve yeast in warm milk and add to the kumara mixture.
Beat the egg in the bowl in which the dough is to be raised.
Pour in the kumara mixture and stir well.
Add the flour and make soft dough.
Rub the surface with melted butter.
Leave in a warm place to double in bulk.
Knead and form into rolls.
Leave to rise on a tray to double in bulk.
Bake at 200 degrees Celsius for 15 minutes or until rolls are done.
