Try any of the following fillings:
Bacon, apple sauce and sour cream.
Plum sauce, bacon and sour cream.
Pickle, cheese and sour cream.
Bacon, spring onion and sour cream.
Butter, chopped marshmallows and a sprinkle of cinnamon.
Butter, sherry and walnuts.
Bacon, sliced banana and maple syrup.
Bacon, pineapple and cheese.
Mussels chopped and drizzled with coconut milk and spring onions.
Grilled mushrooms, toasted sesame seeds, sour cream and chives.
Scrub the kumara, prick the skin with a fork and microwave on high for 3-5 minutes or until the kumara flesh is tender. Mean while prepare the filling ingredients e.g. cook bacon.
Cut open the top of the kumara and top with your chosen filling, garnish and serve. Experiment with different toppings to cater to all tastes in the family. Let the kids make up their own toppings for a fun family activity in the kitchen. Makes a great quick snack, meal or accompaniment to the main dish.
