Leek and Kumara Soup

A lovely soup made creamy by the combination of kumara and cashew nuts.

8 cups water
8 medium to large kumara, peeled and diced
6 leeks
1 large onion, diced
2 tbsp chicken style seasoning
1 cup cashew pieces
1 tsp salt


Cooking Instructions

Cook all ingredients together excluding leeks and cashews. Halfway through cooking add the leeks. Just before serving, blend the cashews with enough hot water to cover them in the blender. Blend until extremely smooth and creamy, then add to the soup and mix through.

Serving Instructions

Serve in warm bowls accompanied by chunks of Turkish Bread.
