Kumara, Date, Prune and Rhubarb Health Loaf

1 medium kumara, peeled and grated
1 cup dates, chopped
1 cup pitted prunes, chopped
4 stalks rhubarb, diced
1 cup orange juice
2 heaped tbsp honey
grated rind 1 lemon
1 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp fresh ginger, grated
1/2 cup chopped walnuts or sunflower seeds
2 cups wholemeal flour


Preparation Instructions

Combine kumara, orange juice, rhubarb and honey in large microwave jug or a saucepan and heat together until rhubarb is soft, allow to cool. Add dates, prunes, lemon rind and baking soda and mix well. Add flour, baking powder, ginger and nuts then mix to combine. Pour mixture into a greased loaf tin and bake 180 degrees Celsius for 35-40 minutes until skewer comes out clean and loaf springs back when touched.
