Cinnamon, Pecan and Kumara Muffin

Kumara Muffins make a great snack or light lunch when entertaining friends and family.

1 3/4 cups self raising flour
1/2 cup sugar
1 tbsp brown sugar
1 tsp salt
1/2 cup chopped pecans
1 1/4 cups mashed kumara
3/4 cup milk
1/4 cup butter, melted
2 eggs
1/2 tsp cinnamon
1/4 cup brown sugar


Preparation Instructions

Mix flour, 1/2 cup sugar, 1 tbsp brown sugar, salt and pecan nuts together. Beat together kumara, milk, melted butter, and eggs. Pour into dry mixture.

Cooking Instructions

Fill into muffin tins, sprinkle with mixture of cinnamon and 1/4 cup brown sugar. Bake at 180 degrees Celsius for 15-20 minutes.

Serving Instructions

These muffins also make a cute cup cake if cooked in paper cases and iced with lemon cream cheese icing.
