A yummy savoury muffin to whip up for lunch. Leave out the ham for a vegetarian option.

2 cups self raising flour, sifted
1/4 cup skim milk powder
1/4 cup grated kumara
2 tbsp cheddar cheese
1/2 small red capsicum, finely diced
3 spring onions, chopped
2 eggs
1 cup milk
1/4 cup diced ham off the bone
cracked pepper to taste


Preparation Instructions

Combine flour, skim milk powder, kumara, cheese, capsicum, ham and onion in a mixing bowl. Lightly whisk eggs, milk and pepper and add to kumara mixture. Spoon mixture into greased or non-stick muffin tins, makes 12. Bake at 180 degrees Celsius for 25-30 minutes or until golden and cooked through.
