Kumara and Peanut PattiesPrint this recipe
This makes a great substitute to mince patties for homemade burgers.

750g peeled kumara, cooked and mashed
300g roasted peanuts, roughly ground
1 tsp roasted, ground cumin seeds
1/4 tsp chilli powder
1/4 tsp salt
2 tbsp desiccated coconut
1 egg, lightly beaten
Add all ingredients to a bowl and mix thoroughly. Form into 1cm thick, round patties.
Fry in shallow hot oil until browned on both sides.
Serve hot in burgers with chosen salad ingredients or alone with home-made fruit chutney.
