Smoked Fish Canapes with Kumara Crust

An old time favourite canape that fills the gap at pre dinner drinks.

Ingredients

1 cup fresh or tinned smoked fish

WHITE CHEESE SAUCE
2 cups milk
3 tbsp butter
2 tbsp flour
1 cup grated cheddar cheese
1/2 onion
salt and pepper to taste

2 cups cooked mashed kumara (smooth enough to use through a piping bag)

12 + bread cases or pastry cases for muffin tins

Method

Preparation Instructions

In 1 tbsp butter saute onions until glassy. Remove from pan and set aside. Make white sauce in the same saucepan over a low heat by melting butter, add flour and cook until it froths, stirring constantly. Gradually add milk allowing the sauce to thicken between each addition. When thick add cheese, onion and smoked fish. Mix to combine and season. Grease muffin tins and insert chosen case. Spoon in the smoked fish mixture. Using a piping bag squeeze the mashed kumara over the top of the smoked fish mixture.

Cooking Instructions

Heat in a moderate oven until golden and then serve. This recipe can alternatively be used to make one large pie.
