Kumara and Mussel Fritters

A delicious combination of kiwi mussels and kumara with a slight flavour of Thai cuisine.

1 cup self raising flour
2 eggs
salt and pepper
1/2 cup coconut cream or milk
1 large red kumara boiled and mashed
1 cup mussels, roughly chopped
2 tbsp sweet chilli sauce
2 tbsp roughly chopped coriander


Preparation Instructions

Make batter with flour, eggs, salt and pepper, coconut cream, sweet chilli sauce and coriander. Beat until smooth. Add kumara and mussels and mix to combine.

Cooking Instructions

Spoon fritters on to a lightly oiled pan or BBQ and cook on a low heat. About 2-3 minutes each side until golden.
