A galette is a free form French round pastry, in this case with a savoury topping.

1 roll flakey puff pastry
1 kg golden kumara, cooked and mashed
3 tsp chopped fresh rosemary
2 cloves crushed garlic
2 tsp ground cumin
1 red onion sliced
season with salt and pepper
Dust a flat surface with flour, roll out pastry and trim to shape into a large round. Place onto a greased flat baking tray or large roasting dish. Add remaining ingredients to the mashed kumara and stir well to combine. Leaving a border around the pastry, place kumara mix on top. Brush pastry with an egg wash, fold and pleat pastry towards centre of filling.
Bake in a hot 200 degrees Celsius oven for about 30 minutes.
