Caramelised Baked Fruit and Kumara Roll

Cut into slices this pinwheel roll makes a lovely dessert with vanilla ice cream.

2 cups flour
2 tbsp butter
2 tsp baking powder
1 cup cooked mashed kumara
1/3 cup milk
2 apples sliced
50g dates
50g sultanas
1/2 tsp cinnamon

1 1/2 cups boiling water
3 tbsp brown sugar
2 tbsp butter


Preparation Instructions

Sift flour and baking powder into a bowl. Rub in butter, add kumara and milk, mix to firm dough. Roll out and spread with raspberry jam. Cover with sliced apples, chopped dates, sultanas and sprinkle over cinnamon. Roll up and place in roasting dish. Pour over syrup.

Cooking Instructions

Bake for 50-60 minutes at 180 degrees Celsius.

Serving Instructions

Serve in slices with icecream.
